About this tin

Mukhwas is what a household reaches for after a meal, out of a steel dabba that has been refilled for years and never once thought about. This is that habit, taken seriously.

Ten things go into it and every one of them is a plant with an address. The gulkand at the heart of it is not stirred in as a syrup: whole petals are layered with Kolhapur jaggery and left in the Pushkar sun for ninety days, then dried down to a crumb. Twenty-three kilos of petals end up a fraction of that, and there is no faster version of the step.

What that buys is a tin worth opening several times a day rather than once after dinner. That is why it is aluminium with a gasket in the lid, and why it is sized to empty in about a fortnight.

How it tastes

Rose first. The cooling turns up about ten seconds later and settles at the back. Then a long dry finish off the fennel. Sweetness is deliberately the quietest thing in it. There is no refined sugar to shout with.
